If you asked me what my ideal life looked like, here it is:

My husband would not have to go to work. (I’m not sure what our source of income would be…I haven’t figured that one out yet.) We would own about ten acres of land. We would have two dogs and two cats, a chicken coup, a bee hive, and a cow for milking only when we wanted. Oh, and we would have a HUGE picture perfect weeded garden.

Until I think of reality.

We actually have a very large garden. It’s not weeded. In fact, lately we have been mowing weeds instead of pulling them.  I don’t like deworming our broccoli, and gardening takes a lot of time and commitment. Oh, and my two year doesn’t just sit and play peacefully in the dirt while I leisurely work in our garden. It’s just not quite that picture perfect.

Animals must be fed every day. And, I’d probably pay more for chicken feed in money than I’d ever get in return for ‘free’ eggs. I don’t like the thought of living in the middle of nowhere if something goes wrong at home. I like to have other people close.

Am I really a homesteader at heart?

Luckily, we have the HUGE blessing of living in a subdivision only 3 and a half miles from my parents. My parents live on about six acres of land, and they graciously allow us to garden at our pleasure out there. We have two rather large gardens this year with an abundance of strawberries and no tomatoes. We have been so very wet this year, and I am not sure we are going to get a single tomato out of our thirty-five plants this year.

We have, though, picked our first round of beans. Every year after we pick our first beans, we go home, snap beans, fry some bacon, sauté some onion, cook some potatoes, and throw it all in a huge pot for a delicious home grown meal. It really is delicious and a lot of memories come with that meal.

This year we came up with something that may be a tad better. My husband and I truly do think this may be the absolute best way to cook your home grown green beans.

Bacon Wrapped Grilled Green Beans

Ingredients:
Olive oil
Minced garlic cloves
Salt
Pepper
Fresh snapped green beans
*Bacon
Toothpicks

1. Snap the ends off your fresh green beans, but leave them long.
2. Add enough olive oil to a pan to coat all your green beans.
3. Add about two teaspoons of minced garlic cloves to your hot oil.
4. Add your green beans to the pan. Stir them around until they are all coated with olive oil.
5. Let the green beans cook on medium to low heat for 13 minutes for crispy green beans off the grill. Cook them longer if you desire softer green beans. Toss them around every few minutes as they cook.
6. While the green beans cook, take your *bacon and cut it in half. Only cut as much bacon as you will need for the amount of green beans you have.
7. Take your green beans off the heat.
8. Carefully using some tongs and your fingers, wrap anywhere from eight to twelve green beans in a half of a strip of bacon.
9. Secure the bacon with toothpicks.
10. On a hot grill, gently set your bacon wrapped green beans over medium heat. Cook until the bacon is crispy and done. (About 2-3 minutes per side – 4 sides total to get it crispy all around.)  Total grilling time 8-12 minutes.

  1. Made these for a small get together with friends to celebrate my husband’s birthday and they were a hit! Everyone commented on what a great idea it was!

    Just FYI, I sautéed the beans and wrapped them in bacon during the afternoon, kept them covered with foil in the fridge, and then pulled them out to grill when it was time. Turned out great!
